As CUPs are an Asymmetric tyre it's possible to that so to get the most mileage & life out of them I'd say Yes
Just make sure you inflate them to 26 psi (1.8 bar) cold for Track work.

The only track worth doing is Istanbul Park F1 Circuit here. The other local track is only a 1.2mile small loop and not fun at all. Istanbul park is a counter clockwise circuit with many fast corners (famous turn leaning the car on rights. Hence my opinion for right to left switch.
